Real balsamic gets its wonderful flavors from the quality of its grapes, picked at the peak of ripeness, and then from years of aging in a complex process that involves moving the vinegar through a series of barrels made from different types of wood. As the vinegar reduces and moves through the different barrels over the years (ours takes 8 years to make), it picks up layers of different flavors and also concentrates antioxidants to produce another superfood with powerful health benefits.
